Does Cocoa Powder Go Bad?

What Is Black Cocoa?

Difference Between Dutch-Process Cocoa and Regular Cocoa
The main difference between Dutch-process cocoa and regular (natural) cocoa comes down to how each is treated during processing.
Natural cocoa powder is made simply by roasting and grinding cocoa beans, then removing most of the fat. It retains its natural acidity, giving it a sharper, more intense chocolate flavor and a lighter reddish-brown color. Because it's acidic, it reacts with baking soda to help baked goods rise.
Dutch-process cocoa (also called alkalized cocoa) is treated with an alkalizing agent that neutralizes its natural acidity. This results in a smoother, more mellow flavor and a darker color. Who Invented Chocolate?
